Maria Fabbrini, Culinary Director
With 20+ years of experience in the culinary arts, often as an Executive Chef serving different people each day, Maria appreciates now being able to serve the same people every day. “Now Iat Modena I have ample opportunities for ‘wow’ moments through connection and celebration,” she says. “Chatting with our wonderful residents and leading my amazing team are what I most enjoy.”
While she considers communication essential, Maria leans toward creativity as the core value that truly drives her department. “Each day, we have ample opportunities to be creative. It may be trying new dishes on the menu, hosting fun events, turning the dining room into a Supper Club, or finding unique ways to celebrate birthdays and anniversaries,” says Maria. “I also look for creative ways to motivate and reward my team.”
Maria’s varied and impressive experience has included working in hotels and restaurants in Chicago, New York, and Las Vegas. She has also worked under Wolfgang Puck, Bill Kim, and Jean Georges. “My favorite thing to both cook and eat is a bowl of pasta.” Fresh tagliatelle tossed in a short rib ragu and topped with parmigiano Reggiano is one of her favorites.
Maria received her Associate’s Degree in Culinary Arts from Kendall College. When she’s not wowing residents with her culinary expertise, Maria enjoys spending time outdoors with her husband, Manny, and two daughters, Maddie and Mia, as well as eating or cooking a good meal. And don’t forget playing with canine pal, Toby.
